CHICKEN SOUVLAKI – Susan Younghans

Whenever I’m in the malls for a meal I always default to the Greek joints.  Can’t get enough of the stuff.  Here’s Susan Younghans take on a classic – Chicken Souvlaki.  Of course, if you prefer lamb or beef they will work well here too.

CHICKEN SOUVLAKI

4                      Olafson’s Greek Style Pitas

1 ½ tsp           salt

1 clove           garlic, minced

2 tbsp             olive oil

1 ½ tsp           lemon juice

1 tbsp             dried oregano

                        fresh ground pepper

 1 lb                  chicken breast, cubed or strips for a skewer

1 cup              Tatziki

1                      tomato, diced

½                     cucumber, diced

½                     onion, diced

Combine oil, lemon juice, garlic, oregano, salt & pepper. Toss chicken in oil mixture and let stand for 15 minutes. Thread chicken onto skewers and grill over high heat or broil, turning once. Set aside.   Warm pitas in oven until soft. Serve with Tatziki, diced tomato, cucumber & onion.
