Please consider this entry! It is delicious and uses left over chicken.
Tomato Chicken Pasta
-500g pasta of your choice
-2 cups of cooked diced chicken (breasts)
-2 tbsp olive oil
-2-6 crushed garlic cloves
-1 cup sliced mushrooms
-1 small onion, diced
-1/2 cup diced celery
-1 large can of stewed tomatoes
-hot chili flakes to taste (optional)
-1/2 tsp salt
1/4 tsp pepper
-1 tbsp basil & oregano
In a large pot of water, boil pasta for 8-10 minutes, drain & set aside.
In a large skillet add oil, garlic, mushrooms, celery, onion & saute until soft, then add the can of tomatoes, cooked chicken & spices. Simmer for 20 minutes & serve over cooked pasta.
If you have time it is delicious to serve with garlic bread. Also it is very easy to add a side of steamed green beans or peas.
