One of my favorite quick dinner is : Spicy Shrimp & Fettucine:
Boil fettucine until tender and cover in cold water until ready to use.
In a large frying pan, sauté in 1 Tbsp butter with a clove of crushed garlic.
Add 1 can drained chunky tomatoes and 1 cup chopped spinach (I use fresh but you can use drained frozen as well).
Add 1 Tbsp Italian seasoning, salt and pepper to taste and 1 tsp of hot pimento paste (from the Italian supermarket).
Wisk in 1 cup whipping cream to thicken.
Add large shrimp or prawns and cook until thoroughly pink.
Add fettucine to the pan until heated, and you have a beautiful Italian dinner that looks like it took days to prepare.
With this dish you can also add fresh mushrooms, bacon, peas and serve as a carbonara.
