Easy Mexican Chicken – Rogina Cannon

Hello

I make this for my hubby when he is wanting something quick and tasty. And this can be made with very low fat content and low sodium if you choose reduced sodium salsa.But it’s packs loads of flavour.

Easy Mexican Chicken
(serves 2)

2 Boneless Skinless Chicken Breasts ( Pounded Flat)
1 TBSP Chili Powder
1 can green chilis
1 cup Salsa ( I use mild but whatever your preference)
1 cup Shredded Cheese ( Mexican Blend or Cheddar)
Fat Free Sour Cream

Side Dish
1 Cup prepared White Rice
1 TSP Chili Powder

Line  baking Dish with foil. This Makes Cleanup easier.
Rub Chicken Breast with Chili Powder
Place in Baking dish and Spread with Green Chilis, Top with Salsa and Shredded Cheese
Bake in 350 degree oven for 30-35 Minutes

Mix Rice with chili powder to taste

Put Rice on your plate and put 1 chicken breast on top or on the side. Top with sour cream and serve
