SPICY SHRIMP CURRY
A very simple, quick and yet flavorful shrimp curry ready in about 20 mins.
2-3 Tsp Olive oil
1 Onion chopped
2 Cloves of Garlic finely chopped
1 tbsp Tomato paste
1 Tomato chopped
1/4 cup coconut milk
1/2 tsp Turmeric
1 tsp red chili powder/chopped green chilies for more spice
1tsp Garam Masala
20 raw Jumbo shrimp shelled and black veins removed
2 cups Water
Cilantro for garnishing
Heat oil in a large skillet over medium heat.Add the onions and saute for 8-10 mins till they change colour.
Next add garlic and continue frying for another minute.
Add Turmeric , salt, red chili powder , tomato paste and the chopped tomato. Continue cooking and stirring occasionally for about 10-12 mins .
Tip in the shrimp and fry stirring for 2-3 mins.Add coconut milk and water.Let cook with pan covered for another 5 mins until shrimp are cooked through
Add garam masala & mix well. Garnish with cilantro.
Serve hot with rice.
