Turkey + Chili – Elyse Jutras

Hello! So today I am going to send in an incredibly super easy Chili to make that is quick, fuss free, gluten free and guilt free.
Its the ultimate comfort food for the colder weather.
 
Turkey + Chili
 
1 tbsp extra virgin olive oil
3 cloves garlic
1/2 cup chopped green onions
1/2 lb lean ground turkey
1/2 lb lean ground beef
2 1/2 tbsp chili powder
1 tsp smoked paprika
2 15 ounce cans diced or whole tomatoes (with juices)
1 15 ounce can black beans (rinsed and drained)
1 15 ounce can chick peas
1 large red capsicum (cored,seeded and diced)
4 carrots (peeled and grated, or finely diced)
1/2 tsp brown sugar
dash of salt
 
In a large pot set over medium heat, heat the oil. Add the garlic and green onions and cook for 1 minute.
Add the ground beef and ground turkey and cook until browned. About 5-7 minutes. Stir in the chili powder
and smoked paprika until fully combined. Add the tomatoes with their juices,black beans,chick peas,capsicums,
carrots,brown sugar and salt. Bring the mixture to a boil. Once it comes to a boil,turn the heat to low.
Cover and let simmer for 20 minutes. Serve with a dollap of sour cream or greek style plain yogurt.
 
optional* you can put this mixture into a glass 9×13 pan and top with mashed potatoes and shredded cheese. bake for
15 minutes at 350 or until cheese is melted.

*steamed rice
OR
*corn bread
OR
*mashed potatoes
OR
*salad
