Hello my recipe is for the following yummy dish:
ROASTED TOMATOES W/ FETA AND SHRIMP
5 – 6 tomatoes cut into wedges
2 tbsp olive oil
2 tbsp garlic
1 tsp lemon juice
pinch of parsley
1 pk cooked shrimp OR
4 – 5 chicken breasts cooked and cut into cubes.
1/2 tub or more crumbled Feta Cheese
Cut tomatoes into wedges. Place tomatoes in a casserole dish. Drizzle with olive oil, lemon juice and and garlic. Add feta cheese. Bake in oven at 400 F for 20 minutes. Remove and stir. Add cooked shrimp and parsley. Place back into oven and bake for 40 minutes. Serve on any type of rice. I love JASMINE rice the best.
P.S. Use just chicken if seafood allergy in family.
P.S. Use both chicken and shrimp for a more heartier meal.
