Hi,
 
This is very creamy and delicious….
 
Cream of Chicken (or Turkey) Soup 

  • 1 quart chicken or turkey broth
  • 1 cup heavy cream
  • 1/4 teaspoon salt (about)
  • 1/8 teaspoon white pepper
  • 1/8 teaspoon nutmeg or mace
  • 1 Tablespoon minced parsley or chives
  • 1 cup diced cooked turkey or chicken

Bring broth to a simmer and slowly mix in cream. Add salt to taste, pepper, and nutmeg. Cover and let mellow over lowest heat about 10 minutes. Serve hot or cold, topped with minced parsley.

QUICK DINNERS Daily Special Winner: EASY PASTA SAUCE

Hi!

I have an absolutely yumm pasta with tomato sauce that can be made from scratch in no time at all.

What you need:

1 medium onion, chopped
1 tbsp margarine
1 tbsp olive oil
1 tsp minced garlic
2 tsp each basil, oregano, italian spice mix
1 can diced tomatoes
1 tsp sugar
salt and pepper to taste

Heat margarine and oil in a pan. Add onions and sautee until soft and translucent. Add minced garlic and stir. Add each of the herbs and the italian mix, and stir a couple times before adding the diced tomatoes. Add the salt and pepper to taste as well as the sugar, and let simmer on med-low for about 15 minutes. Pour mixture in to a blender and blend for a minute. Pour over cooked pasta of your choice and sprinkle parmesan over-top if you wish.

And there you have it, your very own from scratch pasta dish in approximately 30 minutes.

QUICK DINNERS Daily Special Winner: CREAMY CHICKEN LAZUNE – John Melnyk

Very Creamy and rich!!!!

Heavy Cream Chicken Lazune

Servings Size

  • ·4

1 teaspoon salt

1 ½ teaspoons chili powder

1 ½ teaspoons onion powder

2 teaspoons garlic powder

4 whole boneless skinless chicken breasts

¼ cup butter, divided

½ cup heavy cream

Combine the seasonings and coat the chicken breasts.

Melt half of the butter and cook the chicken over medium heat for about 7 to 8 minurtes.

Pour the cream in the skillet and lower the heat.

Simmer for several minutes, stirring until the sauce thickens.  Add the remaining butter.

When the butter is melted, place the chicken breast on plates and top with the sauce.

QUICK DINNERS Daily Special Winner: CHICKEN CASSEROLE – Briar Pashko

Hi Shirley here is one my kids have always enjoyed
 
Chicken Casserole
Prep time 5 minute cook time 35 – 45 minutes @ 350 degrees F
3 – 4 boneless skinless chicken breasts – fresh not frozen
1 can campbell’s cream of celery soup – cream of chicken works well.
1 can water
1 box stove top stuffing – regular or any flavor
 
 
place your chicken breasts  in the bottom of your casserole dish,
sprinkle the box of stove top over top.  Mix together the soup and water. Pour
over the stove top cover and bake 45 minutes.  You can add some grated cheddar
and diced green onion on top for added color and flavor if desired.

QUICK DINNERS Daily Special Winner – SUE MARIE CHICKEN – Shawna Weiss

My dinner idea was given to me a long time ago from my mother in law.  She first gave it to me when my husband and I first starting living together and we were on a student budget. It’s easy, inexpensive and delicious enough that my picky kids eat it.

Sue Marie Chicken

Place chicken breasts in baking dish

In a sauce pan or microwaveable dish, combine equal parts of soy sauce, ketchup, lemon juice and honey. Heat just to be able to combine (about 30 – 45 seconds). Do not boil.

Pour over chicken.

Bake uncovered at 400 degrees Farenheit until Chicken is thoroughly cooked (about 20 minutes for thawed chicken). Baste once during cooking to make sure chicken stays covered.

NOTE:  for the sauce I usually do 1/2 cup each and then I freeze the sauce after its cooked and cooled and reuse once more.

This goes well with rice as a side dish.

KIELBASA-VEGETABLE DINNER – Roz Payne

Hi Shirl,

When I am looking for something different than the regular dinners this one comes to mind.

Kielbasa-Vegetable Dinner

3 slices bacon

1 1/2 pounds small red potatoes, thinly sliced

1 cup chopped onion

1 1/2 cups thinly sliced carrot

1/2 teaspoon dried marjoram

1 1/2 pounds kielbasa sausage, cut into 1/2 inch slices

1 1/2 pounds fresh broccoli flowerets

1 cup water

Cook bacon in a large Dutch oven until crisp; remove bacon, reserving drippings in Dutch oven. Crumble bacon, and set aside.

Cook potato, onion, carrot, and marjoram in reserved drippings in Dutch oven over medium heat 7 minutes, stirring often.

Add kielbasa, broccoli, and water to vegetables in Dutch oven; bring mixture to boil. Cover, reduce heat, and simmer 15 minutes or until vegetables are crisp-tender, stirring occasionally. Spoon into soup bowls; sprinkle with bacon. Yield: 6 servings.

QUICK DINNERS Daily Special Winner: Lazy Tuna Casserole – Jennifer-Renee Matheson

This takes half of the time and is sooooo easy and yummy

Serves 2-4 people

1 can of tuna drained and flaked

1 cup of  mixed vegetables

1 can of cream of mushroom soup (Campbell’s is the best)

3 cups cooked and drained of your favorite pasta ( I like Fusilli)

Directions:

Cook and drain your pasta and put back in pot on burner set to low to keep everything warm

Add cream of mushroom soup and veggies to pot of pasta and stir until all is blended and heated all together (2-3 mins)

Serve immediately and sprinkle with grated cheese of your choice on top for added pizaz.

Add salt and pepper to taste and enjoy!

QUICK DINNERS Daily Special Winner: CALIFORNIA CHICKEN -Jaymee Folkes

Hello..

I love this dish it is one of my favorites… I found a recipe similar and tweaked a little to my liking… Hope you enjoy it!!!

CALIFORNIA CHICKEN

Ingredients

  • 4 skinless, boneless chicken breasts
  • 1 teaspoon olive oil
  • ½ Onion diced
  • 1 pinch salt
  • 1 teaspoon ground black pepper
  • 2 cloves garlic minced
  • 1 teaspoon crushed red peppers
  • 1 lime juiced
  • 2 tablespoon fresh cilantro
  • 3 avocados – peeled, pitted and sliced
  • 2 ripe tomatoes, beef steak sliced
  • 1 (8 ounce) package Monterey Jack cheese, cut into 10 slices

Directions

  1. Preheat oven to 350 degrees F (175 degrees C).
  2. Warm oil in skillet and add onion, garlic, crushed red peppers, cilantro and lime juice until onions are clear. Add chicken. Cook 15 minutes or until chicken is browned and just about done. Add salt and pepper to taste.
  3. Place chicken on cookie sheet and top each breast with 2 slices of tomato and 2 to 3 slices of cheese. Place in oven for 10 to 15 minutes, until cheese melts. Remove from oven, add ½ to 2/3 of an avocado on top of each breast, and serve immediately.
